Honeycomb becomes dark because of the brooding process, that only takes place once for each comb, then reinserted in the bee hive to be filled with fresh honey. Brooding is raising the larvae that the queen has laid inside the comb. Because of the traffic generated by this, the honeycomb will become darker in colour and it has increased propolis content, as the nurse bee will add it in order to cleanse the cells. The honey has a stronger taste and smell. Certain countries consider dark honeycomb a delicacy. The honeycomb is 100% natural and it is normal for natural honey to crystalize. That is proof of good quality honey.
